Instructions:

Make a mulled wine from cinnamon stick, red wine, lemon and orange peel and 1/5 of the butter hot, but do not let it boil. Chill. It doesn’t have to be an old Bordeaux you use for this, but it should be a good quality wine with a strong aroma.

Stir the soft butter with the egg yolks until creamy. Gradually add the sugar (1) and the finely grated chocolate, cinnamon and the cooled, sieved red wine.

Beat the egg whites until stiff and add the sugar (2). The snow must be firm and shiny. Pile the snow on top of the meringue, sift the flour mixed with baking powder and fold in gently and loosely.

Grease a cake pan and fill both thirds with the mixture. Bake in a hot oven for 25 to 30 minutes until golden brown. (I use 180 degrees).

Let the cake cool in the pan for about 5 minutes, then turn it out and serve it cut into pieces with whipped cream.
