Cut lamb into paper-thin slices, then into short strips. Place in
a baking dish form. Add sherry, garlic, ginger, sesame oil and cornstarch. Mix well and marinate for 2 hours.
Cut onion into slices, slice in half and separate the individual, half-round strips.
Heat oil in a wok. Sauté onions briefly. Remove. Sauté meat for 1-2 min, until just cooked.
Place onions on a plate, spread meat evenly on top of onions or mix with them. Sprinkle with sesame seeds.
