Wash the herbs, dab dry and pluck. Peel the garlic and chop finely with the herbs. Heat a tablespoon of olive oil, fry breadcrumbs in it, stirring. Mix with herbs, garlic, 1 tablespoon olive oil and Parmesan, season with salt and pepper. Clean the melanzani and zucchini, wash and cut lengthwise into thin slices. Cut block mozzarella lengthwise into slices as well. Spread melanzani and zucchini slices with herb paste and top with mozzarella. Roll up into rolls and pin with wooden skewers. Heat remaining olive oil and fry the rolls over medium heat for about ten minutes, turning. Serve with tomato sauce, ciabatta bread and a glass of Italian red wine.

Preparation Tip:

Melanzani and zucchini simply cut with the bread machine - so the slices are particularly thin and even!
