For the kiwi sorbet, stir the sugar into the water, bring it to a boil and let it boil for about 5 minutes. Let the whole thing cool down.

Cut the kiwis in half widthwise, get the flesh out of the peel, but leave a thin layer of flesh in the peel. Save the peels.

Place the pulp in a food processor and puree. Add the sugar water and lime juice. Pour it all into a shallow container and put it in the freezer for about 1 hour until it freezes.

Get the sorbet out of the freezer, put it in a bowl and mix it until it is smooth and airy. Return it to the shallow bowl and place it in the freezer for the next 2 hours.

Pour the kiwi sorbet into the kiwi bowls and serve or return to the freezer.
