Pat the cutlets, salt, pepper and flour one side. Heat the oil in a pan, put the cutlets with the floured side first and sear well.

Then remove from the pan and keep warm. Finely chop the onion, cut the bacon into fine strips and fry both together in the frying residue.

Meanwhile, slice the mushrooms and add to the bacon and onion mixture in the pan. Sauté briefly. The pan should be very hot, otherwise the mushrooms will let too much water.

Stir in the sour cream and creme fraiche and season the sauce with salt and pepper. Finally, steam the cutlets in the sauce for another 5 minutes.

Arrange the cutlets with the sauce and serve with any side dishes.

Preparation Tip:

If you like, you can refine the sauce with fresh parsley. The Jägerschnitzel also taste very good with chanterelles. If you don't like pork, use turkey or chicken.
