For the iced asparagus soup, cut the cooked asparagus into small pieces, setting the tips aside as decoration. Blend asparagus pieces with sour milk or yogurt and cooking stock (all ingredients should be very cold) well in a tower blender and strain through a pointed sieve to leave any remaining peel. Season well with salt, pepper and chervil. Add asparagus tips to the cream of asparagus soup and serve cold.

Preparation Tip:

The cream of asparagus soup looks especially decorative if you decorate it with green asparagus tips and small diced tomatoes.
