Cut melon into quarters and remove seeds, scoop out flesh with a baller. Peel the skin of the orange with a sharp kitchen knife close to the flesh, remove the membranes and separate the fillets.

Cut the cleaned celery into pieces and the mushrooms into slices. Cut ham into very thin slices, mix juice of one lemon with mayo and mustard. Season with salt and pepper. Cut cheese into cubes.

Place salad ingredients with the cheese cubes in a sufficiently large bowl, spread the dressing evenly over it, let it sit for a while and bring to the table.

Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
