First boil the potatoes, peel and slice them.

Grease a baking dish with butter and put the potatoes in it. Clean and dice the carrots. Stew in boiling salted water for 4 minutes, then pour over the potatoes.

Brown the onion with the mince in a pan, season with garlic powder. Add the cleaned and chopped mushrooms to the meat and fry everything well. Finally, add the parsley and season well, then pour into the casserole dish.

Pour the hot soup over the casserole. Beat the eggs, season with salt and pepper and pour over the top. Bake the casserole in the preheated oven at 200 °C for about 20 minutes.

Serve the forester’s wife casserole while it is still hot.
