Instructions:

Heat vegetable oil in a large heavy-bottomed saucepan or possibly in a frying pan. Add potato cubes, onions, and garlic and sauté over low heat, stirring frequently, for about 2 to 3 min.

Add garam masala, turmeric, ground cumin, ground coriander, grated ginger and chopped chili pepper to the pan. Mix spices into the vegetables. Roast over low heat, stirring throughout, for 1 minute.

3. add tomatoes, cauliflower florets, peas, chopped cilantro and vegetable soup to curry mixture form.

4. make potato curry at low temperature for 30 to 40 min until potatoes are soft and cooked through.

5. garnish potato curry with fresh coriander and serve with cooked long grain rice or warm Indian fresh bread.
