For the curry sauce, sweat the paradeis pulp in olive oil.

Add curry powder and cayenne pepper, sweat and extinguish with orange juice.

Mix in some bouillon cubes and bring everything together to a boil. Season with salt, pepper and star anise. Dilute with water as needed.

For the fries, cut the baked potatoes into strips about 3 x 3 cm thick and 8 cm long and blanch in boiling hot salted water for 2-4 minutes.

Then finish baking in plenty of fat until golden brown. Drain briefly on kitchen paper.

Fry the curry sausages. Serve with curry sauce and French fries.

Preparation Tip:

If you don't like it so spicy, you can reduce the amount of cayenne pepper to your liking.
