For the curd-strawberry nests prepare a quick curd-oil dough, which tastes best fresh good and therefore should preferably be eaten the same day.

Put half of the curd in a muslin cloth, squeeze out the moisture and cream the dry curd with oil, an egg and sugar.

Mix flour with baking powder and oatmeal and add to the curd cream to form a malleable dough. Divide into ten portions, shape into round balls and flatten from the inside out to form a rim.

Mix the remaining curd with honey, egg, double cream and the grated zest of half a lemon. Fill the mixture into the nests and smooth down.

Bake in the preheated oven at 200°C (gas mark 3) for about 25 minutes.

In the meantime, clean the strawberries and halve or quarter them. Press them into the curd filling while it is still warm. The curd strawberry nests taste best warm.

Preparation Tip:

The curd-oil dough is a perfect base for other pastries, as well as Easter rolls, or sweet snails with various fillings.
