Instructions:

Squeeze the curd very well, it must be completely dry or almost crumbly. Mix cornstarch with 2 tablespoons of water. Beat soft butter with egg yolks until creamy. Stir cornstarch, bread crumbs, curd and a little bit of grated lemon peel into the fluffy butter. Stir in finely chopped wild garlic, season vigorously with salt and freshly ground pepper. Form dumplings from the mixture and cook them in boiling salted water.

For the sauce, melt 2 tbsp butter in a saucepan, add flour.

Add the milk while stirring (be careful of lumps!) and let it boil. Season with nutmeg, salt, pepper and vegetable stock powder. Remove the saucepan from the stove, stir in the cheese cubes and serve with the curd dumplings.
