For the chicken gnocchi:


Sauté the finely chopped onion in butter, extinguish with white wine and boil. Add the soup and cream and bring to the boil, stir in the QimiQ. Add the chopped herbs and bring to the boil.

Finely dice the chicken breast, season with salt and pepper and chill well. Prepare chicken meat in a food processor with whipping cream to a farce. Transfer to a whisking kettle, whisk well with a wooden spoon. Then add pistachios, vermouth and juice of one lemon. Mix everything well and finally fold in the whipped cream.

Form small dumplings with a teaspoon and soak in salted chicken broth or water for about 10 minutes.
