Cook the dough one hour before use and put to cool: Mix flour, sugar and cinnamon. Add cold pieces of butter and rub with fingertips until crumbly. Mix egg yolks and cream, add to mixture with lemon zest and knead until smooth. (Help with cream if it is too dry.) Wrap in plastic wrap and place in refrigerator.

Peel and core the apples, cut into quarters. Cut half of them into cubes and soften with juice of one lemon, sugar and raisins. The raisins should remain whole. Cut the remaining apples into slices. Mix with the hot apple puree and spices, cool.

Roll out two-thirds of the dough between two sheets of plastic wrap. Place with plenty of edge in a tall pie dish, prick bottom with fork.

Pour in quantity, overlapping dough and brush with water. Roll out remaining dough to cover size and place on top. Cut out a few steam holes. Bake at 200 °C in the heated oven on the lowest rack for forty to forty-five minutes until golden brown. Cool in the mold.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
