For the Cookie Monster Cupcakes, first melt the white chocolate coating over a water bath. Place in a piping bag and pipe round circles (24 pieces) on the baking paper.

Mix butter, vanillin and cream cheese until creamy. Add powdered sugar by the spoonful. At the end, use food coloring of choice and whip for a few minutes.

Then place the coconut shavings in a freezer bag and add blue food coloring and shake until the shavings turn blue.

Spread the blue frosting on the cupcakes and roll in the coconut shavings. Finally, stick the eyes into the cupcake. Divide the cookies in half and press one half into each cupcake.
