Rinse the sour cherries, dry them, cut them in half, remove the seeds and place them in a greased ovenproof dish with a low rim. Preheat the oven to 220 °C. Mix the flour with the baking powder, salt and milk. Separate the eggs. Mix the yolks, the powdered sugar, the vanilla sugar and the lemon zest into the dough. Whip the egg whites until very stiff and fold into the batter with a whisk. Pour the batter over the sour cherries. Place the pan on the broiler in the oven (bottom) and bake the casserole for 50 minutes. Just before the end of the baking time, whip the whipped cream with the sugar until stiff. Add the cinnamon. Serve the cinnamon cream with the clafoutis.

The cherries can be replaced by any fruit of the season, plums, peaches, apricots or currants are also very good.
