For citrus snow dumplings, wash orange, lemons and limes under hot water, dry and grate peel thinly all around.

Then squeeze, collect juice and set aside.

Beat egg whites with a pinch of salt in a large bowl (food processor or hand mixer) until snowy. Gradually add the fine granulated sugar and beat until the sugar has dissolved (test around the edges). Then add the zest. The snow should be very stiff and have a nice sheen!

Bring water to a boil with the remaining sugar in a roomy saucepan, covered. Reduce temperature until liquid just stops boiling.

Using damp spoons, cut out dumplings from the snow and place them in the hot sugar water. Cover and let stand for about 5 minutes, turn and let stand for another 5 minutes. Lift out with a lattice scoop and drain on paper towels.

Add the juice of the citrus to the sugar water and reduce by about half.

Let citrus syrup cool slightly and pour into bowls. Arrange the citrus snow dumplings on plates, garnish with fresh lemon balm, add syrup bowls and serve.

Preparation Tip:

You can also prepare the citrus snow gnocchi completely "without citrus": Simply prepare the dumpling mixture according to the recipe and omit the citrus. Creamy vanilla or caramel sauce goes perfectly with the "natural" snow dumplings!
