In freshly baked waffles, whole-wheat flours taste particularly good. In addition, they get along with little fat. In short: a healthy snack.

Cream butter with honey. Add eggs and vanilla pulp. Mix both types of flour with baking powder. Add the mixture to the egg mixture. Add enough mineral water to make a viscous dough. Allow the dough to rise for at least 15 minutes. If necessary, add more mineral water and then bake waffles from 2 to 3 tbsp. of dough until the dough is processed. Mix curd with yogurt until smooth and sweeten with half of the maple syrup. Rinse apple, pear and berries. Quarter the apple and pear, remove the core and cut into cubes. Sprinkle the cubes with a tiny bit of juice from one lemon. Select berries and mix with the other fruit. Season the fruit salad with the remaining maple syrup and ginger powder. Spread a little bit of curd between two waffles, divide the “waffle double-decker” into hearts and serve the leaf salad with the waffles.

If you do not have buckwheat flour in the house, you can also use only whole wheat flour.
