Instructions:

For the strawberry and toffee slices, beat the eggs and powdered sugar until fluffy.

Carefully fold in flour and salt. Spread on a baking tray lined with baking paper (38 x 25 cm) and bake at 180 degrees for approx. 12 – 15 minutes. Remove the baking paper. When the sponge has cooled, cover with baking frame.

For the curd cream, mix curd, powdered sugar, lemon sugar and vanilla sugar. Whip the cream until stiff. Soak gelatin leaves in cold water and dissolve in hot rum and add to curd mixture. Finally, fold in the whipped cream.

Spread the cream on the sponge cake and let it set in the refrigerator. Then clean the strawberries and place them on top of the curd cream. Prepare cake jelly according to directions and pour over strawberries, not too hot. When jelly is hard, remove baking frame and cut into slices.

Serve the strawberry and curd slices.

Preparation Tip:

Garnish the strawberry topping slices still with fresh strawberries.
