For the poppy seed rolls, first sift the flour into a bowl and make a well in the center. Add the yeast and make a pre-dough with the milk and some of the flour.

Cover and let rise for 15 minutes.

Mix butter with egg, salt and nutmeg, add to the pre-dough and knead with the remaining flour until smooth. Cover and let rise for 30 minutes.

Butter a baking pan. Cut down pieces of the dough weighing 40 g and form into balls. Flatten slightly and place side by side in the baking dish. Cover and let rise for another 20 minutes.

Mix egg yolk and milk, brush the rolls with it and sprinkle with poppy seeds. Bake the poppy seed rolls in the preheated oven at 200 °C convection oven on the middle shelf for 20 minutes. Place a pot of water on the bottom of the oven.

Preparation Tip:

The poppy seed rolls taste just as good for a snack as they do for breakfast.
