A simple but delicious cake recipe:

A recipe from “grandma’s baking book” is the knitting needle cake: You poke holes in a sponge with a thick knitting needle, which are then filled with an aromatic liquid. This creates a fluffy and juicy cake. Traditional preparation is with lemon or orange juice. The Miele test kitchen in Ölde has tried a different variant using a mixture of cocoa, coffee, sugar and rum.

Cream butter or light butter. Add sugar, vanilla sugar and eggs alternately. Add vanilla flavoring (or rum) and flour mixed with baking powder. Pour the batter into a greased springform pan (approx. 26 cm), smooth out and bake until golden brown.

Setting: hot air, top/bottom heat, heat: 160 °C, rack: 1st from bottom, baking time: 55 to 65 min.

In addition, the finished cake can be dusted with a mixture of powdered sugar and cocoa. The knitting needle cake tastes delicious with egg liqueur whipped cream. For the egg liqueur whipped cream, whip 250 ml of whipped cream with a packet of va- nillin sugar until stiff, fold in about 5 tablespoons of egg liqueur. Serve the egg liqueur whipped cream in a dessert bowl with the cake.
